Baking fun

Our attempt at Beignets.

No Cafe Du Monde that's for sure.
They of course didn't taste the same but it was fun to try. We sure did make a mess. Thanks Tasha and Anna for cleaning up.

On Friday Justin decided we needed to bake cookies,
AS A FAMILY. So I let him and Eli mix while I took pictures. Eli loves to help. I truly think we have a chef in our future.
.

And as all bakers do, you MUST taste test. Especially when the baker is 2 1/2. The ccokies taste good. And it was fun to watch them bake together. It may be a long time before
Justin decides he wants a family baking night, just a guess.

Have a good Sonday.

Chicken Parmesan

Thursday night's dinner, Chicken Parmesan....courtesy of cooks.com.
We don't have much to choose from, but we had the few things need for this. I guess these are the staples that are always in our cupboard.

The final picture isn't great, but it sure did taste good. I am becoming quite the domestic diva... if I do say so myself.

Quilt finished

It's finished........It is defiantly NOT perfect...but that's okay. I will learn and get better. It feels great to have it finished, a big accomplishment.

Dinner is served!

Well tonight I decided to make rice balls for dinner. I took the recipe from a cook book Justin bought me for Christmas 2 years ago. I just HAD to have this book and this is the first time I've made anything from it.

It's by Jessica Seinfeld. The idea behind the book is to hide veggie that your kids wouldn't normally eat. I really don't have that problem but I thought the book would be fun.
So, I find myself rolling the rice into a ball, then rolling it in a veggie puree/egg wash then into bread crumbs and then to the pan for a light frying. Frying you say, well I guess you have to start somewhere.

Anyway, Justin walked in as I was mixing the veggie and egg wash, I choose spinach tonight for this. You can only imagine what his comment was, "I'm NOT eating that". Okay that's fine that is your choice, I thought to my self, no need for an unnecessary argument, right. Well off to the shower he goes as I start to fry these rice balls. Into the kitchen he comes in a bit of a hurry to get out the door saying to Eli, "well I guess I will try one of these rice things and then dad has to go". Much to my surprise Justin turns to me and says "well I was wrong these are pretty good". I kindly said thank you as he inhaled another before dashing out the door.

Dinner was a SUCCESS!!!! It sure is nice to hear those words. Especially when it comes to my cooking.

So maybe I will do the Julie/Julia thing and blog all of the recipes I make from this book. I won't do one a day. It may take me several years, but I'll let you know how the next one turns out.

All though the sun didn't shine much today like it has recently, today is the day the Lord has made, we will rejoice and be glad in it......

Tis the season

THIS is my dream garden.
And so it is time to start thinking about spring and thinking about dirt and veggies and compost and SUNSHINE. Tis the season to begin planning the garden. I have started a (secret, don't tell Justin) garden stash, $$, this year so when spring comes I am ready. Ready to buy everything I need to start this adventure to create my perfect garden. My slate is as blank as they get. A wide open space to create anything I want. This is just a dreamy picture, of a dreamy place in a far away land. What a perfect place to..... well let your imagination take you there, someplace great! 1 Thessalonians 5:16-18
Rejoice always, pray continually, give thanks in all circumstances; for this is Gods will in Christ Jesus.

Fresh Eggs

I have a friend who is raising chickens at home and they have started to lay eggs!!!!! It's almost like they are children. I go to work and ask her how the chickens are doing..."did you get any eggs this weekend". It's really funny to listen to everyone talk about eating the eggs...for some reason when you get the eggs from the store there is almost, well there is a disconnect to just where the eggs came from and how those eggs came to be. I would think eating store bought eggs would be more disturbing then eating eggs from chickens that you know. So for now I will use them for baking and some day I will eat one over easy with a piece of toast.....but until then I will enjoy giving them to Eli for breakfast.

Peace and love,

P.S try a farm fresh egg today

something new...but not.

So I was trying a new recipe and didn't want to get it messy.....so I put it in a ziplock bag and taped it to the cupboard.....now I know this is no new thing, but it changed the way I followed the recipe....I didn't have to be careful to not get anything on it or have it on the otherside of the kitchen and walk back and forth....my mom thinks I should submit it to a contest but I think I will just share with my friends and family for now....so good luck if you use the idea and let me know how it works!!!!

Peace and Love for now......tootles
